Firstly thank you for the python scripts, super useful. I'm looking at output of squelch_table_read.py and was not expecting so many tables.

I'm finding UV-K5 just not picking up as much as my Baofeng UV-5RA and I think it's because of the squelch being pretty aggressive on lowest setting (1) on the Quansheng (on 0 it makes scanning useless/annoying).

Has anyone experimented with changing these? I'm wondering what is the difference between glitch and noise? The numbers don't make much sense to me for glitch. I might just try lowering 5 dB or so on noise.

I experience the same here. As it is not an issue in a noisy neighborhood, I agree stock settings being aggressive.
Squelch tuning is not an easy task. You can get clues at @OneOfEleven 's custom firmware repo https://github.com/OneOfEleven/uv-k5-firmware-custom/blob/3fb581760e58eee1e2d817fd468a870d7286af60/radio.c

Look for the note "my squelch-1". I'm sure his tuning is closer to your needs. Anyway I haven't touched mine.
