Adds documentation for environment variables in the README.md file.

Introduces a new "Environment Variables" section before the "Development" section.
Lists and describes each environment variable from src/env.ts, including their default values, in a table format.
Explains the purpose of each environment variable and how it affects the application's behavior.

For more details, open the Copilot Workspace session.
